To cold-brew tea, use 5-6g (two scoops) of tea leaves and fill the bottle with cold water. Steep it for 3-24 hours in the fridge, or for an hour in room temperature for a faster brew. Cold-brewing draws fewer tannins into the tea compared to hot-brewing. Tannins are a type of polyphenol, an antioxidant compound in tea leaves that imparts an astringent taste to the tea. Fewer tannins result in a smoother, sweeter tea.
